It's Italian - Day 63

Tonight is going to be a quickie.....sweet hubby seems a bit cranky, so I'll keep this short and sweet. Sometimes you gotta just take care of "big daddy." Today I made a really tasty juice that was inspired from a great Italian classic....here's the recipe:

Bruschetta:

1 pint (or more) grape or cherry tomatoes
1 sweet Vidalia onion (you can red or other variety)
1 bunch basil
2-3 cloves garlic
1/2 head celery
1 red bell pepper
1/2 large cucumber
juice of one lemon
freshly ground pepper, to taste
Celtic Sea Salt, to taste

  1. Hi Penni
Meant to email you today - but forgot.

I have been juicing with my new Greenpower twin gear juicer. Initially when I tried using my VitaMix and the nut milk bag idea - I think I was doing it wrong, I would try to twist the bag and force the juice out. Just before my new juicer arrived, I figured out it was better to just sort of "milk" the bag, rather than trying to force the juice out.

Maybe I should go back to that idea. I get really frustrated when I spend 2-3 hours juicing in the morning - and that's not counting the cleanup afterwards.

Now that Tom is quite interested in the juicing as well, I have a LOT of juice to make in the morning! With him trying to quit smoking things get a little tense around here lately - and I don't want to put any more stress on his plate because I really want him to be successful in getting off the cigarettes. I could hardly believe it when I found out he had been smoking again. He had been trying to "protect" me from knowing.

    Hugs

I hope you realize what a gift it is to create a juice to substitute for a mouth-watering food. You are truly amazing!

    Love ya,

  6. I'm going to try this juice today. I passed along yesterday's recipe to my friend who is doing a modified JF, and she sent me an e-mail this morning raving about it!

I'm going back to juice for a couple of days at least to give my nose a chance to heal.

    Thanks for your recipe generosity!
